SLICED PEACHES WITH HONEY, WALNUTS AND GREEK YOGURT (for four)

“A simple mixture of yogurt and honey is served for dessert in small restaurants all over the Greek islands….Walnuts, a staple of Greek cuisine, as well as mint, find their way into my interpretation of this dish…. the addition of sour cream makes it closer in flavor and texture to the yogurt I enjoyed in Greece.” Jacques Pepin

4 cups peeled, sliced ripe peaches

1 teaspoon sugar

ouzo to taste (a Greek anise flavored liquor)

2 cups Greek yogurt (Fage is readily available in the United States)

1/3 cup sour cream

8 walnut halves, each broken in half

8 tablespoons of the best honey available (Greek thyme honey would be perfect)

1 tablespoon shredded fresh peppermint or spearmint leaves

1 tablespoon grated lemon zest


1. Place the peaches in a bowl with a teaspoon or so of sugar and a large splash of ouzo. Allow to marinate for half an hour.

2. Mix the yogurt and sour cream together in a bowl and divide among four dessert plates. Spread the peaches over the yogurt, sprinkle the walnuts on top and drizzle about 2 tablespoons of honey over the yogurt mixture on each plate. Top with the mint and the lemon zest and serve.
