Salads, slaw, mango 1  Salads, slaw, mango 2

1 large green papaya or 2 large mangoes, peeled, seeded and julienned

1 small carrot, peeled and julienned

2 scallions, thinly sliced

1 jalapeno, halved, seeded and thinly sliced

¼ cup mint leaves, julienned

¼ cup cilantro leaves, julienned

¼ cup lime juice

2 tablespoons rice wine vinegar

2 teaspoons minced ginger

2 teaspoons sugar

1 teaspoon mirin or ½ teaspoon sugar

fine sea salt and freshly ground black pepper

1. Combine all of the ingredients in a large mixing bowl, season to taste with salt and pepper and toss to evenly coat.

2. Let the slaw marinate for 10 minutes in the refrigerator before serving.
