CHICKEN SOUP WITH APPLES, CREAM AND LEEKS

CHICKEN SOUP WITH APPLES, CREAM AND LEEKS (from Normandy, for six)

For the stock:

a whole roasted chicken carcass, meat removed and reserved

2 teaspoons salt

½ cup chopped onion

½ cup chopped celery

½ cup chopped carrot

1 bay leaf

8 parsley stems

For the soup:

½ stick butter

3 cups cooked chicken meat reserved from stock or 2 pounds raw boneless chicken breasts

3 leeks, trimmed, leaving 1 inch of the green part, split lengthwise, washed well, sliced thin

2 Golden Delicious or Granny Smith apples

1 cup apple cider

½ cup cider vinegar

3 cups chicken stock

3 tablespoons Calvados (apple brandy from Normandy, where this recipe originates) – optional

½ cup heavy cream

toasted French bread slices as an accompaniment

1. Combine the chicken bones and scraps in a stockpot with salt and water to cover by 1 inch. Bring to a boil, reduce heat and simmer for 30 minutes. Skim and scum that rises to the surface of the stock.

2. Add the flavoring ingredients to the stock and simmer, partly covered, 1-1/2 hours or more. Strain through a sieve into a bowl and discard the solids. Degrease the stock.

3. In the cleaned stockpot, melt 2 tablespoons butter over moderate heat, add the leeks and cook, stirring occasionally, for 10 minutes. Add the apples, peeled and cut into ½ inch pieces, the apple juice, the vinegar and the stock. Bring the mixture to a simmer, skimming off any fat or froth. Reserve stock.

4. Skim the fat from the soup and stir in the Calvados, the cream, the shredded chicken and salt and pepper to taste. Simmer the soup for 3 minutes, until heated through and serve with the toasted bread.
