COOKWARE: LODGE CAST IRON SKILLET

LODGE 12 INCH CAST IRON SKILLET

The Lodge Manufacturing Company was founded by Joseph Lodge in 1896 in South Pittsburg, Tennessee, population 3,000, on the banks of the Cumberland River. Lodge is one of the oldest cookware companies in the United States, and it has been owned and managed by members of the Lodge family since its inception.

Why cast iron? First, it’s indestructible. The pan pictured above has been in continuous use for more than forty years, and is none the worse for wear. It is made to last a lifetime, maybe more than one, and it can handle a cooktop, oven, grill or open fire. Second, cast iron is easy to use and maintain, making it appropriate for foodies from beginners to chefs. Third, Lodge cast iron is seasoned at the factory and has a naturally nonstick finish and, fourth, its incredible heat retention makes it truly multipurpose. This workhorse pan can put a serious sear on a juicy steak, roast a chicken, saute vegetables, bake bread, or fry eggs. To wit:

BLACKBERRY COBBLER
IRISH AMERICAN SODA BREAD
POLPETTE DI TACHINO
ROASTED CHICKEN WITH PAPRIKA AND SWEET ONION
SALMON HASH
SAUTEED ZUCCHINI WITH CARROTS, PARSNIPS AND TURNIPS
