CAJUN STYLE BROILED SHRIMP (for four)
1 garlic clove
1 teaspoon salt
½ teaspoon cayenne
1 teaspoon paprika
1 tablespoon lemon juice
2 tablespoons olive oil
lots of black pepper (start with ½ teaspoon and proceed with caution…)
1-1/2 pounds peeled large shrimp
lemon wedges to garnish

1. Turn on the broiler and put the rack close to the heat (about 3 inches from the flame should be both safe and effective…).
2. Mash 1 garlic clove with 1 teaspoon salt until it forms a paste.
3. Add to it ½ teaspoon cayenne, 1 teaspoon paprika, 1 tablespoon lemon juice, 2 tablespoons olive oil and lots of black pepper.
4. Rub paste all over 1-1/2 pounds of peeled shrimp.
5. Broil 2 to 3 minutes per side.
Here served alongside a southern chopped salad.
