CUCUMBERS

 

COOL AS A CUCUMBER OR HOT STUFF?

Cucumbers are 90% water and, as a result, are most often eaten raw and cold in salads (see cucumber salads for a more detailed description of this fruit of a climbing vine treated as a vegetable in cooking). But they can be cooked, as the following recipes illustrate, and they offer a light and refreshing addition to summer menus.
