TARTAR SAUCE

TARTAR SAUCE (about ¾ cup)

½ cup mayonnaise

1 hard-cooked egg

1 tablespoon finely chopped shallots

2 tablespoons finely chopped parsley

2 tablespoons finely chopped chives

2 tablespoons capers, drained and pressed to extract excess liquid

1 teaspoon lemon juice

¼ teaspoon Tabasco sauce

 


  1. Put the mayonnaise into a mixing bowl.
  1. Put the egg through a fine sieve and add it to the mayonnaise. Add the shallots, parsley, chives and capers.  Add the lemon juice and Tabasco sauce and blend.
