OZARK PUDDING

OZARK PUDDING (for four)

This was said to be Harry Truman’s favorite dessert.  It regularly was served at the Marshall Field’s Department Store in Chicago.

1/3 cup all purpose flour (measured then sifted)

1-1/4 teaspoons baking powder

1/8 teaspoon salt

1 egg

¾ cup sugar

½ cup apple, peeled and chopped

½ cup pecans, lightly toasted and chopped

1 teaspoon vanilla extract

1.  Preheat oven to 325*.  Butter a 1 quart casserole, souffle or deep pie dish.

2.  Sift together flour, baking powder and salt.

3.  Beat egg and sugar until light and fluffy.  Stir in vanilla.

4.  Add flour mixture and blend well.

5.  Fold in apples and nuts.

6.  Spoon into prepared dish and bake 30 minutes.

7.  Serve warm with whipped cream or vanilla ice cream.
