BROILED SHRIMP

Broiled shrimp is among the quickest, easiest dishes to prepare;  they can be ready in 3 to 6 minutes, depending on their size and the heat of the flame.  And the resulting shrimp are perfect;  juicy on the inside and lightly browned and crisp on the outside.

This versatile method allows shrimp to be diversely flavored; while Mediterranean seasoning is usual (shrimp with garlic and lemon butter, Greek shrimp with tomato, feta and oregano, shrimp scampi), Asian (shrimp with spicy ginger lime butter) or Middle Eastern (cumin shrimp) spices also are popular and, in the American south where shrimp are plentiful, numerous broiled shrimp dishes are present (barbecued shrimp or Cajun style broiled shrimp).   Broiled shrimp also are found in many other parts of the world.  

The technique could not be simpler:  Shrimp are arranged in a single layer on a baking sheet and broiled a few inches from the flame for just a couple of minutes on each side until they turn opaque.  They can be served as an appetizer or a main course.
