STUFFED ACORN SQUASH

See the introduction to roasted acorn squash for tips on selecting and storing acorn squash.  My only additions here are that:

  • A sturdy knife with a long, serrated blade is useful for slicing through the stiff squash shell.

  • A grapefruit spoon with a serrated tip makes quick work of scraping membranes and seeds out of the squash centers.
