BAKED HALIBUT WITH GARLIC SAUCE

BAKED HALIBUT WITH GARLIC SAUCE (for four)

2 pounds halibut fillet

3 garlic cloves

2 tablespoons extra-virgin olive oil

1/3 cup mayonnaise

lemon wedges to accompany


  1. Preheat oven to 450* with rack in middle.
  1. Put fish in an oiled shallow baking dish and sprinkle with a teaspoon each of salt and pepper.
  1. Force garlic through a garlic press into a bowl, then whisk in oil and 1/8 teaspoon salt. Whisk in mayonnaise and spread over fish.
  1. Bake, uncovered, until fish is just cooked through, 30 to 35 minutes. Plate and serve with French beans with lemon and Italian fries.
