STEAMED BROCCOLI RABE WITH GARLIC AND OIL (for four)

 2 bunches broccoli rabe

4 tablespoons olive oil

6 large garlic cloves, chopped fine


  1. Remove and discard a couple of inches of the tough bottom stalks and any large, coarse leaves on the broccoli rabe. Rinse it well in cold water and place it in the steamer insert of a covered saucepan.
  1. Place about 2 inches of water in the bottom of the saucepan, cover it, and bring the water to a rapid boil. Place the steamer insert containing the broccoli into the saucepan and cover.  Steam for 3 to 4 minutes, or until the broccoli is crisp-tender and still a vivid green color.  Immediately remove insert from saucepan and place it under cold running water for several minutes to stop the cooking and retain the bright green color.
  1. Heat the oil in a large heavy skillet over moderately high heat and, when hot but not smoking, add the garlic and sauté, stirring constantly, until garlic is golden brown, 2 to 3 minutes. Add the broccoli rabe and cook, tossing, until heated through, about 2 minutes more.
