BRAISED PETITS POIS WITH MINT AND ONIONS (for eight)
½ stick (4 tablespoons) unsalted butter
1-½ pounds onions, halved lengthwise and thinly sliced crosswise
two 10-ounce packages frozen baby green peas, thawed
¼ cup finely chopped fresh mint
½ teaspoon salt
1/8 teaspoon freshly ground black pepper
- Heat butter in a 12 inch heavy skillet over moderately low heat until foam subsides. Add onions, cover, and cook, stirring occasionally, until soft, about 5 minutes.
- Add peas, mint, salt and pepper and cook, stirring, until peas are heated through, 3 to 4 minutes.
