SWISS WARM POTATO SALAD WITH PEARS (for four)

1-1/2 pounds potatoes (about 4 medium-sized)

1-1/2 pounds ripe but firm pears (about 4 medium-sized), peeled and sliced

½ cup beef or chicken broth, hot

1 teaspoon salt

1 teaspoon pepper

1 tablespoon prepared mustard

1 tablespoon white wine vinegar

2 tablespoons peanut or corn oil

1 ounce sago cheese, finely grated (substitute Parmesan if sago is not available)

1 tablespoon chives, finely chopped

6 slices bacon, cooked crisp, drained and chopped


1. Quarter the potatoes lengthwise and cut them crosswise into ½ inch pieces. In a vegetable steamer set over boiling water steam the potatoes, covered, for 10 to 15 minutes, or until they are tender, and transfer them to a large bowl. Add the sliced pears and toss gently.

2. In a small bowl, mix together the hot broth, salt, pepper, mustard, vinegar and oil. Pour this over the potatoes and pears, toss lightly, and sprinkle the grated cheese on top.

3. Serve warm, garnished with the chives and crisp chopped bacon.
