SAUTEED ZUCCHINI WITH CILANTRO AND CREAM

SAUTEED ZUCCHINI WITH CILANTRO AND CREAM (for four)

2 tablespoons (¼ stick) butter

2 garlic cloves, minced

1-¾ pounds zucchini, trimmed and cut into 1/3 inch thick rounds

4 tablespoons chopped fresh cilantro, divided

1/3 cup whipping cream


  1. Melt butter in a heavy large skillet over medium heat. Add garlic and saute 10 seconds.  Add zucchini and 2 tablespoons cilantro;  saute until zucchini is crisp-tender, 5 to 6 minutes.  Add cream and simmer until liquid thickens enough to coat zucchini, about 1 minute.  Season to taste with salt and pepper, sprinkle with remaining 2 tablespoons cilantro and serve.
