A North African spice mix used in Lebanon, Syria, Israel and Jordan, baharat means “spice” in Arabic. The blend is often used to season lamb, but is also used for fish, chicken, beef, tomato sauces and soups. It is a useful rub for barbecue.
2 tablespoons fresh ground black pepper
2 tablespoons paprika
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon ground cloves
1 teaspoon nutmeg
1 teaspoon ground cinnamon
½ teaspoon cardamom
a pinch of chili powder and/or cayenne pepper (optional, add if you want some heat)
1. Combine spices in a bowl and mix well.
