BLUE CHEESE DIP (about 1 cup)

½ cup sour cream
¼ cup finely chopped scallion
2 tablespoons finely chopped flat leaf parsley
½ cup crumbled blue cheese (2 ounces)
2 teaspoons fresh lemon juice
1-1/2 teaspoons milk
1. Stir together ingredients, 1/8 teaspoon salt and ¼ teaspoon pepper.
NOTE: This is the traditional accompaniment to Buffalo wings (or Buffalo shrimp). It can be made up to 1 week ahead and refrigerated, covered.
