OBATZDA (Bavarian cheese spread, for ten)
1 pound ripe camembert, rind removed, at room temperature
1 tablespoon unsalted butter, softened
½ pound cream cheese, at room temperature
2 tablespoons minced chives, divided
1 red onion, half finely diced and half sliced into thin rings
paprika to taste (about 1 teaspoon)
caraway seeds to taste (about 2 teaspoons)
salt and freshly ground black pepper to taste
6 to 8 tablespoons wheat beer
pretzels to accompany
1. Mash the camembert with a fork and add the butter, cream cheese, 1 tablespoon minced chives and the diced onion. Stir until smooth and spreadable.
2. Season to taste with paprika, caraway, salt and pepper. Gradually add the beer and stir until incorporated.
3. Garnish with remaining minced chives and onion rings. Serve with pretzels.
