SAUTEED BABY SPINACH WITH GARLIC, GINGER AND SESAME SEEDS (for four)

1 tablespoon vegetable oil
2 minced garlic cloves
2 tablespoons finely grated peeled fresh ginger
2 pounds baby spinach washed well under cold running water and spun dry
salt to taste
2 teaspoons toasted sesame seeds
- Heat vegetable oil in a large, heavy skillet over moderate heat until hot but not smoking. Add garlic cloves and ginger and cook, stirring, until fragrant and golden, about 30 seconds. Add spinach by the handful, stirring, and cook until just wilted and bright green, 2 to 3 minutes. Season with salt and serve sprinkled with toasted sesame seeds.
