SAUTEED BABY SPINACH WITH PEANUTS (for four)

2 tablespoons vegetable oil
2 pounds baby spinach , washed well under cold water and spun dry
½ cup chopped, unsalted, dry-roasted peanuts
a generous pinch dried hot red pepper flakes
4 teaspoons tamari or other soy sauce, or to taste
salt and freshly ground black pepper to taste
- In a large non-stick skillet heat vegetable oil over moderately high heat until hot but not smoking and saute the baby spinach with peanuts, red pepper flakes and tamari or other soy sauce, stirring, until just wilted and bright green, 2 to 3 minutes.
- Sprinkle spinach with salt and pepper.
