PEGGY’S GREEK LEMON BARS (12)

4 large eggs
1 cup granulated sugar
1 teaspoon vanilla
¼ cup salad oil
1 tablespoon grated lemon peel
2 tablespoons lemon juice
¾ cup flour
2/3 cup chopped walnuts
½ cup currants or raisins
powdered sugar
- Grease and flour a 7 by 11 inch baking pan.
- Beat eggs and sugar on high speed for 5 minutes (5 minutes is long but necessary). Beat in vanilla, oil, 1 teaspoon of the peel, juice and flour. Stir in nuts and raisins.
- Pour batter into prepared pan. Bake in center of oven at 375* until cake begins to pull away from sides of the pan and center is set when lightly touched, 25 to 30 minutes. Set on rack to cool completely.
- When cooled, dust with powdered sugar and remaining peel for garnish. Cut into bars.
NOTE: These freeze nicely
