PEGGY’S GREEK LEMON BARS (12)

4 large eggs

1 cup granulated sugar

1 teaspoon vanilla

¼ cup salad oil

1 tablespoon grated lemon peel

2 tablespoons lemon juice

¾ cup flour

2/3 cup chopped walnuts

½ cup currants or raisins

powdered sugar


  1. Grease and flour a 7 by 11 inch baking pan.
  1. Beat eggs and sugar on high speed for 5 minutes (5 minutes is long but necessary). Beat in vanilla, oil, 1 teaspoon of the peel, juice and flour.  Stir in nuts and raisins.
  1. Pour batter into prepared pan. Bake in center of oven at 375* until cake begins to pull away from sides of the pan and center is set when lightly touched, 25 to 30 minutes.  Set on rack to cool completely.
  1. When cooled, dust with powdered sugar and remaining peel for garnish. Cut into bars.

NOTE:  These freeze nicely
