1-½ cups coarse salt
6 bay leaves
2 tablespoons whole coriander seeds
1 tablespoon juniper berries
2 tablespoons black peppercorns
1 tablespoon fennel seeds
1 teaspoon black or brown mustard seeds
2 tablespoons rosemary
5 star anise
- Stir the salt, bay leaves and spices together (or put them into a container with a lid and shake thoroughly) and proceed with the brining instructions.
