STIR-FRIED SNOW PEAS WITH CRISPY WATER CHESTNUTS (for four)
½ pound (2 cups) fresh water chestnuts, or canned
1 tablespoon peanut oil
3 tablespoons finely diagonally sliced scallions, white and green parts
1-1/2 cups snow peas, trimmed
1 tablespoon light soy sauce
2 tablespoons water
1 teaspoon salt
½ teaspoon finely ground black pepper
1 teaspoon sugar
2 teaspoons Asian sesame oil
- Peel the fresh water chestnuts and thinly slice them.
- Heat a wok or large frying pan over high heat until it is hot. Swirl in the peanut oil and when it is very hot and slightly smoking, toss in the scallions. Stir-fry for 10 seconds, then add the snow peas and water chestnuts and stir-fry for 1 minute. Make sure you coat them thoroughly with the oil. Then toss in the rest of the ingredients except the sesame oil and continue to stir-fry for another 3 minutes. Stir in the sesame oil and serve at once.
