STIR-FRIED SNOW PEAS WITH GARLIC (mange touts, for four)

2 tablespoons vegetable oil

½ teaspoon sea salt

4 cups snow peas, trimmed and strings removed

4 garlic cloves, crushed

¼ teaspoon white sugar

¼ teaspoon sesame oil


  1. Heat vegetable oil in a hot wok or nonstick skillet until surface seem to shimmer slightly. Add salt and snow peas and stir-fry for 1 minute.  Immediately add crushed garlic and stir-fry for 1 minute, stirring constantly to ensure that garlic doesn’t burn.  Add sugar and stir-fry for 10 seconds.  Lastly, add sesame oil and serve immediately.
