LOMAY’S SHRIMPS WITH SNOW PEAS AND WOOD EARS
1 pound shrimp, cleaned
1 tablespoon sherry
1 teaspoon cornstarch
1/2 teaspoon sugar
3 tablespoons peanut oil
2 to 3 sliced ginger
2 to 3 scallions, cut into 1 inch pieces
1/2 pound snow peas
7 to 8 wood ears, soaked in warm water
- Mix together the shrimp, sherry, cornstarch, salt and sugar. Let the shrimp marinate at room temperature while preparing the other ingredients.
- In 1 tablespoon oil over high heat, saute snow peas and wood ears. Salt, transfer to serving dish.
- In 2 tablespoons oil saute scallions and ginger. Add shrimps and water as needed. When cooked, add vegetables and stir until well mixed.
