CRISP SAUTEED CABBAGE WITH CARAWAY (for two)
1 onion, chopped
2 tablespoons vegetable oil
1 tablespoon unsalted butter
1-½ teaspoons caraway seeds
½ small head cabbage (about ¾ pound), cored and sliced very thin
fresh lemon juice to taste
1. In a large heavy skillet cook the onion in the oil and the butter over moderately low heat, stirring, until it is softened. Add the caraway seeds, the cabbage and salt and pepper to taste, saute the mixture over moderately high heat, stirring, for 5 to 7 minutes, or until the cabbage is crisp-tender, and sprinkle it with the lemon juice.
