LOBSTER ROLLS (for six)
1 pound cooked fresh lobster meat
2 ribs celery, diced
1 cup lemon mayonnaise
1 tablespoon chopped fresh dill or tarragon
6 hot dog rolls, split along the top
2 tablespoons unsalted butter
1. Cut the lobster meat into ½ inch pieces and place them in a mixing bowl. Add the celery, ¾ cup of lemon mayonnaise and dill or tarragon. Toss thoroughly.
2. Toast the hot dog rolls under a broiler and spread them with butter and extra lemon mayonnaise. Heap the lobster mixture in the rolls and serve immediately.
