CAROLINA GOLD SAUCE (2 cups)
Throughout the 1700s, South Carolina drew a large contingent of immigrant German families. These new settlers brought with them ideas and advancements in ways to farm, as well as an affinity for the flavor of mustard. Even today, many of the families that produce mustard barbecue sauce have a German heritage. Note that while South Carolina appreciates mustard in its barbecue sauce, it is anathema in North Carolina….
1 cup yellow mustard
½ cup apple cider vinegar
¼ cup molasses
¼ cup honey
1 tablespoon dark brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon mild hot sauce
1. In a bowl, whisk together mustard, vinegar, molasses, honey, sugar, Worcestershire and hot sauce.
