AJI VERDE

AJI VERDE (Colombian green salsa, about 1 cup)          

½ small white onion, minced

a small bunch of cilantro, minced

1 jalapeno pepper, seeded and minced

6 to 8 tablespoons white vinegar

1 tablespoon olive oil

1 teaspoon salt

2 to 3 tablespoons water

1.   Combine the onion, cilantro, jalapeno and vinegar in a bowl and mix well.  Add the olive oil and salt and mix until well combined.  Add water a bit at a time until the salsa is the consistency you prefer.
