COLOMBIAN PORK AND LENTIL SOUP (for six)

2 tablespoons vegetable oil

3 garlic cloves, finely chopped

½ cup yellow onion, finely chopped

5 cups beef broth

1 cup lentils, washed and drained

2 carrots, peeled and diced

2 potatoes, peeled and chopped into large pieces

1 pound pork tenderloin, cut into ½ inch pieces

1 teaspoon ground cumin

salt and pepper, to taste

chopped cilantro, to taste

white rice, to taste

sliced avocado, to taste

1.   Heat the oil in a large pot on medium low heat.  Add the garlic and onions and saute for 5 minutes or until tender.

2.   Add broth, cover the pot and bring to a boil.  Add lentils, carrots, potato, pork, cumin, salt and pepper.  You can add more broth if desired.  Cover the pot and bring to a boil.  Reduce heat and cook for 35 to 40 minutes, or until the lentils are tender.

3.   Once the lentils are ready, taste them and adjust the seasoning.

4.  Serve immediately with a little cilantro, a side of rice and avocado.
