OLIVE AND PIMIENTO CHEESE TEA SANDWICHES (about 2 cups of the spread)
12 ounces sharp white cheddar, grated
6 ounces cream cheese
3 tablespoons mayonnaise
1 tablespoon lemon juice
¼ cup green olives stuffed with pimiento, minced
2 to 3 tablespoons olive juice
1 teaspoon garlic powder
salt and cayenne pepper, to taste

1. Add half the cheese and half the cream cheese to the bowl of a food processor. Pulse until well combined and mostly smooth. Transfer to a large bowl.
2. Add the rest of the grated cheddar and the cream cheese to the pureed mixture in the bowl and stir until well combined. Add the remaining ingredients and mix well to form a thick spread. Taste and adjust for seasoning, then spread on bread, crackers, veggies, top a burger or between two slices of crustless bread to form a tea sandwich.
