BAKED SWEET POTATOES WITH BITTERS

BAKED SWEET POTATOES WITH BITTERS (for six to eight)

unsalted butter, softened, for greasing baking dish

1 cup bitter orange marmalade

1 cup fresh orange juice (from about 3 oranges)

1 tablespoon Angostura bitters

1 teaspoon salt

½ teaspoon freshly ground black peppers

3 pounds sweet potatoes (4 large) peeled and cut lengthwise into 6 wedges each

1.   Put a rack in the middle of the oven and preheat oven to 450*.  Generously butter a 13 by 9 inch glass baking dish.

2.  Heat marmalade and orange juice in a 1 quart heavy saucepan over moderately low heat, stirring, until the marmalade melts.  Stir in bitters, salt and pepper and remove from heat.

3.   Put potatoes in a large bowl, pour marmalade mixture over and toss gently to coat.  Arrange in 1 layer in baking dish.  Bake, uncovered, turning potatoes once or twice, for 30 minutes.  Then bake, without turning, until potatoes are tender and tops are slightly caramelized, about 30 minutes more. 

4.  Let stand for 10 minutes before serving to allow glaze to thicken.
