WEEKNIGHT SPECIALS:  COLD CHINESE STYLE SESAME NOODLES WITH CHICKEN AND CUCUMBER

The only cooking required by this simple menu is boiling the capellini and the corn.  These can be combined if you cook the capellini in a pot with a pasta insert.  When it’s al dente, transfer the pasta with the insert into a sink to drain.  Bring the water remaining in the pot back to a boil and cook the corn.  The whole operation should take less than 10 minutes, a relief on a sultry night.
