Pork tenderloins have much to recommend them:  they are cheap, versatile, fast and simple to prepare.  You’ll often find them packaged two ¾ pound tenderloins to a cylindrical bundle in the meat counter.  Remove the plastic, separate the tenderloins and pat them dry with paper towels.  If you are cooking for four, prepare both.  If it’s just the two of you, freeze one and halve the recipes that follow.
