BAKED HALIBUT WITH WALNUT CRUST (for four)

 vegetable oil or nonstick vegetable oil spray

¾ cup finely chopped toasted walnuts

½ cup panko (Japanese bread crumbs)

¼ cup (packed) chopped fresh Italian flat-leaf parsley

2 tablespoons finely chopped fresh basil leaves

2 tablespoons finely chopped fresh chives

2 pounds halibut fillet

4 tablespoons butter, melted

lemon wedges


  1. Preheat oven to 450*. Lightly oil a rimmed baking sheet or spray it with nonstick spray. Mix walnuts, panko and all herbs in small bowl and sprinkle with salt and pepper.  Brush fish steak with melted butter and sprinkle with salt and pepper.  Place fish on prepared baking sheet.  Sprinkle panko mixture on top of fish, spreading evenly and pressing to adhere.
  1. Roast fish until just opaque in center, about 30 to 35 minutes. If crisper topping is desired, preheat broiler and broil fish about 1 minute, watching carefully to prevent burning.  Transfer fish to plates; garnish with lemon wedges and serve with roasted asparagus with lemon.
