THOUSAND ISLAND DRESSING (about 1-1/2 cups)

Another dressing that dates from the early twentieth century, this mayonnaise-based concoction is colored by chili sauce. It was invented in Clayton, New York by Sophia LaLonde, whose husband was a fishing guide in the Thousand Islands area of the St. Lawrence River. It became popular first at the Clayton Herald Hotel, and later at the Waldorf Hotel in New York City.
2/3 cup mayonnaise
4 teaspoons ketchup-style chili sauce (Heinz works)
2 tablespoons chopped shallots
1 tablespoon white wine vinegar
2 teaspoons Dijon mustard
¼ teaspoon salt
1/8 teaspoon freshly ground black pepper
½ cup vegetable oil
- Combine all ingredients except oil in a blender and blend until smooth. With motor running, add oil in a slow stream and blend until well blended.

NOTE: Traditional over a crisp wedge of iceberg lettuce, or even as a dressing for hamburgers.
