COCKTAIL SAUCE (the classic, with Tabasco and Worcestershire sauce, about 1 cup)

3/4 cup ketchup
2 tablespoons freshly grated or prepared horseradish
2 tablespoons minced shallots
1 tablespoon fresh lemon juice
½ teaspoon Tabasco sauce
¼ teaspoon Worcestershire sauce
¼ teaspoon celery salt
- Mix all ingredients in a small bowl, cover and refrigerate until ready to use. Serve with lemon wedges. (Sauce can be made 1 day ahead and chilled, its surface covered directly with plastic wrap to prevent a skin from forming.)
