4 tablespoons minced shallots or scallions
2 tablespoons dry mustard
5 to 6 shakes hot pepper sauce
grinds of fresh pepper to taste
5 tablespoons red wine vinegar, more as needed
2 tablespoons or more fresh lemon juice
3 cups extra-virgin olive oil
fresh herbs or your choice, such as tarragon, chervil or basil
- Beat all ingredients together in an electric mixer or shake in a large
screw-top jar. Taste carefully and correct for seasoning. After you dress
your salad, taste a leaf or two and toss in more salt and pepper if needed.
