LOMAY’S BEEF WITH SNOW PEAS
1 tablespoon sherry
1 tablespoon soy sauce
1/4 teaspoon salt
1/2 teaspoon sugar
1 teaspoon cornstarch
Stir fry ingredients:
1 pound flank steak
2 scallions, sliced in 1 inch pieces
1/2 pound snow peas, stemmed
8 dried mushrooms, soaked and sliced (reserve soaking liquid)
8 ounce can sliced water chestnuts
4 tablespoons peanut oil
1. Slice round steak into long, thin strips. Put into bowl, and add marinating ingredients and stir until well mixed. Let marinate at room temperature while preparing other ingredients.
2. Saute snow peas and mushrooms in 1 tablespoon oil over high heat. Add salt, transfer to platter.
3. Saute scallions in 3 tablespoons oil over high heat. Add meat, stir. If the mixture begins to get dry, add some of the reserved liquid from soaking the mushrooms. When almost done, return the vegetables and add the water chestnuts to the wok/skillet. Stir until the vegetables are heated.
