LOMAY’S CHICKEN WITH BELL PEPPERS AND WALNUTS
1 pound boneless chicken breast
1 scallion, sliced in 1 inch pieces
1 red bell pepper
1 green bell pepper
1/2 cup walnuts
1 tablespoon sherry
1 to 2 tablespoons hoisin sauce
3 tablespoons peanut oil
- Cut up chicken breasts into small slices. Place in bowl. Add sherry and hoisin sauce.
- Cut up peppers into 1 inch squares. Saute in 1 tablespoon hot oil; set aside.
- Saute the sliced scallion in 2 tablespoons oil over high heat; add the chicken breasts. When done, add the peppers and walnuts. Mix together, serve.
NOTE: I add 1 tablespoon soy sauce to this recipe.
