SMORDAMPETE NYPOTETER (Norwegian butter steamed new potatoes, for four)

½ cup (1 stick) unsalted butter
2 pounds new baby potatoes, left whole if small (about 1 inch) cut in half if larger
¼ cup water
1 teaspoon salt
½ teaspoon pepper
2 tablespoons chopped fresh parsley or dill
1.Melt the butter in a Dutch oven or 10 inch skillet with a lid. Add potatoes and stir to coat. Add water and sprinkle with salt and pepper. Cover and cook on low, shaking the pan occasionally, until the potatoes are tender, 35 to 40 minutes. Put in a serving dish, pour any remaining butter over and sprinkle with parsley or dill.
