THAI ICED TEA (cha yen, for four)


Why is Thai iced tea orange? Apparently because Thai tea mix includes the same yellow food coloring that the Kraft Foods Corporation uses in its macaroni and cheese…


1-1/4 cups Thai tea mix

6 cups boiling water

sugar to taste

8 generous tablespoons sweetened condensed milk



1. Bring the water to a boil, add the tea mix and allow to steep for 15 minutes. Strain, cool to room temperature and chill, covered.

2. Add sugar to taste to the tea and stir until it dissolves. Place 2 generous tablespoons condensed milk into each of 4 glasses. Add ice cubes and the tea and serve.


NOTE: For Thai hot tea, substitute tea cups for the glasses, strain the hot brewed tea and serve immediately. For cha dum yen, Thai tea without milk, omit the sweetened condensed milk.
