STIR FRIED CELERY WITH FIRM TOFU (for four)
4-1/2 ounces plain, smoked or spiced firm tofu
5 stalks celery
2 tablespoons cooking oil
1. Cut the tofu evenly into bite sized strips. Cut the celery into strips to match the tofu.
2. Heat a wok over a high flame. Add the celery and dry fry until nearly cooked. Set aside.
3. Return the wok to a high flame. Add the oil, swirl it around, then add the tofu. Stir fry until hot and tinged with gold, then add the celery. Stir fry briefly to reheat the celery, seasoning with soy sauce and salt to taste.
NOTE: The celery in this recipe can be replaced by one green bell pepper, stem, membranes and seeds discarded, flesh cut into tofu sized strips.
