DEVILED HAM AND PECAN TEA SANDWICHES (32)
2 cups Nana’s deviled ham
1-1/2 cups pecans, toasted, cooled and chopped to a fine mince in a food processor
¼ cup mayonnaise
16 slices thin cut firm white sandwich bread

1. Add ½ cup of the minced pecans and the mayonnaise to the deviled ham and stir to mix well.
2. Spread all the bread slices on one side with a thin layer of mayonnaise. Spread ham mixture (1/4 cup per sandwich) over the mayonnaise on half of bread slices and top with remaining slices, mayonnaise side down, pressing lightly to adhere. Remove the crusts from the sandwiches and cut them into triangles.
3. Put the remaining ¼ cup parsley in a shallow bowl, spread the edges of the sandwiches lightly with mayonnaise then dip the quarters in the parsley, pressing lightly to help it adhere.
NOTE: Sandwiches can be bite-sized and served for tea or as hors d’oeuvres, or full-sized as lunch or a light dinner.
