SIMPLE FRUIT SALSA

SIMPLE FRUIT SALSA (for six)

For the salsa:

1 mango

1 cup diced strawberries

1 cup diced pineapple

2 tablespoons lemon juice

1 teaspoon honey

zest of 2 limes

½ teaspoon poppy seeds

For cinnamon sugar tortilla crisps:

5 small fajita size flour tortillas

2 tablespoons butter, melted

3 tablespoons sugar

1 teaspoon cinnamon

1.   For the salsa:  Combine all ingredients in a small mixing bowl.

2.  For the tortilla crisps:  Brush tortilla with melted butter.  Combine cinnamon and sugar and sprinkle over melted butter.  Cut tortillas into triangles and bake in a 350* oven for 20 minutes, or until crisp.
