HONEY HOISIN SWEET POTATOES (for six to eight)
¼ cup hoisin sauce
2 tablespoons honey
1 tablespoon olive oil
½ teaspoon salt
4 small sweet potatoes, halved lengthwise
2 tablespoons lime juice
1/3 cup chopped cashews
1 green onion, chopped
1. In a small bowl, stir together hoisin, honey, olive oil and salt. Halve sweet potatoes lengthwise. Brush the cut sides with 2 tablespoons of the hoisin mixture. Place potatoes, cut sides down, in a baking pan lined with foil and coated with nonstick cooking spray. Roast at 425* for 25 to 30 minutes or until tender.
2. Add lime juice to remaining hoisin mixture and spoon over cooked sweet potatoes. Top with cashews and green onion. Serve with lime wedges.
