CARIBBEAN STYLE VINAIGRETTE (from the French islands, about 1 cup)

¼ cup lime juice
salt
freshly ground black pepper
pinch sugar
½ teaspoon Dijon mustard (optional)
¾ cup olive oil
1.Combine the lime juice, salt and pepper to taste and the sugar in a bowl, together with the mustard, if liked. Beat with a fork until the salt has dissolved. Beat on the oil to blend thoroughly.
